I love salad. Honestly, it’s my favorite food.

I can’t resist a plate of bright, beautiful fruits and vegetables sitting in front of me. My love for salad has gotten so out of hand that I’ve been known to eat a large green salad for breakfast. When I’m feeling droopy or just out of sorts, all I need is a salad to make me feel better. Just looks at these salads we’ve had. How can they not make you feel good!

Salad – A side dish or main meal

A salad not only helps fill you up, but it can also add a serving or two of vegetables to your meal. Romaine, green leaf lettuce, or red leaf lettuce is a good base. Feeling adventurous? Combine all three types!

Top the lettuce with grilled or raw veggies or fruit to make a quick side dish. Add a protein like meat, nuts, eggs, cheese and/or beans, and serve with breadsticks for a complete meal.

Salad prep

To save time, you can prewash the lettuce and chop the toppings. After washing the lettuce, fold a paper towel and lay it in the bottom of a large storage container. Once the washed lettuce is completely dry, store it on top of the paper towel in the container. The paper towel will absorb any remaining water and keep your lettuce fresh longer.

Spend a few minutes washing and cutting up vegetables and store them in a separate air-tight container. Then, come mealtime, just dish out a serving of lettuce, add your already chopped toppings, and in a couple of minutes you’ve got a great side dish or main.
