Quinoa Salad
This salad that works well as either a main dish or as a side dish.
Ingredients
- 2 ½ cups Quinoa, cooked
- 3 Cucumbers, with peel and diced
- 2 medium Carrots, raw and diced
- 2 medium Apples, diced
- 2 cups Spinach, raw and roughly chopped
- 1/2 medium Avocado, diced
- 1/3 cup Sunflower Seeds, without shells
- 1/3 cup Cranberries, dried
- 4 ounces Feta Cheese, crumbled
- 2 tablespoons Olive Oil
- 1/2 teaspoons Lemon Juice
Instructions
- Toss all ingredients together.
- Serve immediately or cover and chill in the refrigerator before serving.
