Quinoa Salad

This salad works well as either a main dish or as a side dish.

Ingredients
  

  • 2 ½ cups Quinoa, cooked
  • 3 Cucumbers with peel, diced
  • 2 medium Carrots, raw and diced
  • 2 medium Apples, diced
  • 2 cups Spinach, raw and roughly chopped
  • 1/2 medium Avocado, diced
  • 1/3 cup Sunflower Seeds, without shells
  • 1/3 cup Cranberries, dried
  • 4 ounces Feta Cheese, crumbled
  • 2 tablespoons Olive Oil
  • 1/2 teaspoons Lemon Juice

Equipment

  • Large mixing bowl

Method

  1. Toss all ingredients together. 
    2 ½ cups Quinoa, cooked, 3 Cucumbers with peel, diced, 2 medium Carrots, raw and diced, 2 medium Apples, diced, 2 cups Spinach, raw and roughly chopped, 1/2 medium Avocado, diced, 1/3 cup Sunflower Seeds, without shells, 1/3 cup Cranberries, dried, 4 ounces Feta Cheese, crumbled, 2 tablespoons Olive Oil, 1/2 teaspoons Lemon Juice
  2. Serve immediately or cover and chill in the refrigerator before serving.
