Quinoa Salad
This salad that works well as either a main dish or as a side dish.

Ingredients

Quinoa, cooked

Cucumbers, with peel and diced

Carrots, raw and diced

Apples, diced

Spinach, raw and roughly chopped

Avocado, diced
1/3
cup
Sunflower Seeds, without shells
1/3
cup
Cranberries, dried
4
ounces
Feta Cheese, crumbled

tablespoons
Olive Oil
1/2
teaspoons
Lemon Juice
Instructions
Toss all ingredients together.
Serve immediately or cover and chill in the refrigerator before serving.
