Crepes…Oh, how sweet you are.
These crepes are so good. They make the perfect spring or summer breakfast. They even make a great dessert.
filled with goodness
We like filling them with a cream cheese mixture and topping them with diced fresh fruit. You can get creative and try different combinations of fresh fruit. In the picture above, you’ll see bananas, diced strawberries, and diced kiwi.
The cream cheese mixture is super easy to make. Just combine a package of softened cream cheese with a little almond extract and a little sugar. Yum!
If you’d rather have a crepe that’s less sweet, you can fill yours with scrambled eggs, diced ham, vegetables, and cheese.
how to make crepes
Ingredients
2 cups milk
3 large eggs
1 and 1/3 cups all-purpose flour
1/4 teaspoon salt
Directions
Combine all of the ingredients in a mixing bowl and whisk well. Don’t worry, the batter will be runny.
Prepare a frying pan by lightly spraying it with cooking spray and warming it up on medium-low heat.
Using a 1/4 cup measuring cup, carefully pour some of the batter into the hot pan. As you pour it in, swirl it around to create a thin layer.
Cook for around 45 seconds, or until the crepe is golden around the edges and dry in the center.
Carefully flip the crepe and cook for around 10 more seconds. It’s done cooking once it’s golden.
Repeat with the remaining batter, spraying the pan in between batches if the crepes begin to stick.

The crepes will look rubbery when they are done. Don’t worry. That’s what perfection looks like.
