Crepes

These crepes are so good. They make the perfect spring or summer breakfast. We like filling them with a cream cheese mixture and topping them with diced fresh fruit.

Ingredients
  

  • 2 cups Milk
  • 3 large Eggs
  • 1 ⅓ cups All Purpose Flour
  • 1/4 teaspoon Salt
  • Cooking Spray

Equipment

  • Large mixing bowl
  • Whisk
  • Large skillet

Method

  1. Combine all ingredients in a mixing bowl and whisk well (the batter will be runny). 
    2 cups Milk, 3 large Eggs, 1 ⅓ cups All Purpose Flour, 1/4 teaspoon Salt
  2. Spray a skillet with cooking spray and warm the pan on medium-low heat.

  3. Fill a 1/4 cup measuring cup with batter.  Carefully pour the batter into the skillet, swirling it to create a thin layer in the pan. 
  4. Cook for about 45 seconds or until the crepe is golden around the edges and dry in the center.
  5. Carefully flip the crepe and cook another 10 seconds, or until golden.
  6. Repeat with the remaining batter, spraying the pan between batches with the cooking spray if the crepes begin to stick.

Notes

The crepes will look rubbery when they're done cooking. 
The best crepe filling is a cream cheese mixture made by combining 8 ounces of softened cream cheese with a splash of almond extract and a little sugar. It tastes like cheesecake filling.
These crepes are amazing filled with the cream cheese mixture and topped with diced fresh fruit.
