Buttermilk Pancakes

This is the best buttermilk pancake recipe we've tried. They are light and fluffy and melt in your mouth!

Ingredients
  

  • 1 ¼ cups All-Purpose Flour
  • 1 Egg
  • 1 ¼ cups Buttermilk
  • 1/4 cup White Sugar
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1/4 cup Vegetable Oil

Instructions
 

  • Combine all ingredients in a blender and puree until smooth. 
  • Preheat a skillet over mediumheat. 
  • Pour small amounts of the batter onto the hot skillet to form the pancakes. 
  • Cook the pancakes until the edges appear to harden.
  •  Carefully flip the pancakes and cook on the other side until golden brown.

Notes

If you don't have buttermilk on hand, you can make some by mixing  1  1/4 cups of regular milk with a 1/4 teaspoon of lemon juice.
